LOVE STORY AT CLAY’S
Tiffany and Tom met at High School. She read communication, fashion and management. He concentrated on management. Both are prone on working and travelling, they are ambitious and visionary. They have just opened a restaurant where food is good, and where you can have a coffee and even brunch on Sundays. Let’s see who those two lovers are.
They settled 3 rue Bonaparte, the trendiest street in town. Tom grew up in the kitchen smells of the “Tire Bouchon”, a chic local institution. So, he normally took his first steps into work in catering. He started as a manager; then, he was deputy director. After that, he improved his training at an organic restaurant. And that was an eye-opener! To complete his knowledge, he worked for the firm “C’est bio, c’est bon”. Organic food became a source of inspiration to both.
They moved to Nice with a dream: opening their own restaurant. But before that, they wanted to see the world, find new tastes and spices and discover what is done in healthy food around the world. They explored Australia, Indonesia, Thailand, Vietnam and London.
On April the 3rd, the Clay’s restaurant opened inconspicuously. On the menu, only local, seasonal organic products; they get their supplies from their local farmers at the Libération market. Out with industrial suppliers and national firms…
At the Clay’s we have tested the salmon ginger tartar, a delicate exotic savour. Absolutely exquisite! Their bread and avocado, soft-boiled egg and feta may easily be a complete dish. Everything is fresh, tasty and utter delight.
Tom is in the kitchen and Tiffany serves from 9 am to 18 pm from Tuesdays to Thursdays, on Fridays and Saturdays from 9 am to 22pm and on Sundays form 11 to 15 for brunches only. Such non-stop service is a rarity in Nice! Reservations are made for brunches only.
The young lovers intend to give their best to their clients, 70% of whom are regulars. From the small place for 20 covers only, a pacifying energy emanates.
Of course, Clay refers to clay! But more generally it evokes all that comes from the earth untreated like their products. It is also an allusion to the nature inspired decoration: hemp ropes, oak wood tables…
